Task :

Hospitality Business Consultants was approached by Peter Minos, from Minos Business Negotiators, to assist with the takeover of City Grind Cafe and to propose opportunities whereby the cafe may be improved. HBC's aim was to maximise the business opportunity ensuring a profitable return on their capital outlay, whilst at the same time ensuring the full vision of the business. HBC was contracted to deliver the 'findings' and 'recommendations' for City Grind Cafe.

HBC Findings and Recommendations :

City grind cafe has in past years been a very successful business. It is well located across the street from the Sofitel Wentworth Hotel and conveniently located on Bligh Street for many corporate clients. HBC observed the cafe over various times of the day and days of the week since we were contracted. This has allowed us to gain further information for how the operator may attract more customers. 3 main areas of concern were: branding of the cafe, current service styles, decor and design. City Grind Cafe needs to become known as a quality cafe that offers food styles that suit the clientele. It has done this in the past and is capable of this in the future.

The cafe needed a change in lighting, more signage and clearer branding to create more store visibility. There must be a logo change, to create warmth and excitement. We recommended a small refurbishment and were confident that the amount spent would return growth in business. City Grind was to be a funky bright cafe which utilises its space better with a functional layout. We felt that the cafe needed friendlier, bubblier, skilled staff, with a branded uniform in the right positions. We also recommended the cafe needed ambience, through correct selection of music and plasma screens with appropriate channels. A new engineered menu design with regular promotions was a must. With the correct number of menu items and clear internal and external signage, this cafe was going to be a great success.

Outcome :

City grind Cafe with the support of HBC has grown considerably in daily sales and weekly sales already. With good management and understanding of our direction for the cafe, City Grind is fast becoming the cafe that many are talking about. Cafe design and layout has been this cafes strength. It has great street visibility now and creates an environment that clientelle choose over many cafes in the area. Sequence of service, staff attitude and operating procedures has helped the cafe move in the right direction.
