Task :
Kobe Jones has gained much success from its Sydney and Melbourne stores for quality modern Japanese food. Hospitality business consultants had been approached by Kobe Jones London Limited to assist with the management and marketing of its London outlet. Located in busy Tottenham Court road, off Oxford Street London, Kobe Jones had been experiencing some operational issues, due to the different market segments that London offers, and operational issues due to the lack of management structure. HBC was contracted for 8 weeks to bring Kobe Jones on a path to success.
HBC Findings and Recommendations :
Kobe Jones first and most important aspect to rectify was for HBC to source qualified staff for front and back of house, and implement structured training manuals, recipe cards and standard operating procedures for consistency in product and quality. The brand has had great success in Australia and should not be associated with unprofessional and unexperienced staff. With the employment of new chefs tight measures were implemented on food quality and service. New suppliers were sourced, in order for Kobe Jones product to be constantly monitored and regular food tastings in place.
HBC also implemented a successful advertising, marketing and PR campaign. With the experience of the current restaurant manager, employed by HBC, Dennis Marrianakis, marketing funds were distributed tactfully and results were delivered. Kobe Jones attracts a 25-40 year olds, funky clientele, in a high income bracket. Lighting was changed to create a bar like ambience. Music had to be at a certain volume to block the sound of people walking on the wooden floor, and style of music was also important. Budgets were implemented for front of house and back of house and bonus systems were also implemented for key staff members to make them more accountable.
Outcome :
During the 8 week period of implementation of HBC's strategy, we had achieved all the required and necessary requirements for the restaurant to continue its success and operate as a profitable business. Kobe Jones also saw an increase in business due to these recommendations, and costs were better managed over this time. Although time was a factor HBC managed to have the restaurant trading at the recommended and budget time.
