Task :

To begin with, market research and investigation was conducted on the surrounding area. It was concluded that individual tenancy design was underdeveloped when compared to popular dining / bar venues within the area, and the menu offering was limited. This was then used as the launching pad for Settlement Bar. Design presentation of the venue and its distinctive menu and beverage options combined with affordability were used to establish a point of difference. There was a dominance of international fast food offerings in the area, with little emphasis on 'healthy and lighter' food choices for the busy business district. Service styles were based on fast food formats and there was no inclusion of table service within a restaurant & bar venue.

HBC Findings and Recommendations :

Based on the research findings, a unique design and menu mix was established with table service that was efficient for the busy business luncher. Moving away from the traditional style format, inclusion of an indoor and alfresco restaurant area was established. Also, a bar was at the core of the operating philosophy to drive impulse ‘after work’ snacks and drinks. A recruitment system was then implemented with tailored operations manuals to ensure management and staff were properly trained which lead to consistency and efficiency. Our extensive supplier network saw stock costs reduced and food wastage limited. A branding campaign was then used to communicate awareness to the surrounding CBD areas.

Outcome :

By establishing a design and menu mix to address these findings, HBC and 3 PILLARS PTY LTD created a totally new dining destination for the busy business district seeing results immediately.Settlement Bar logo was designed and together with the branding campaign and emphasis on location, Settlement Bar name and distinct point of difference within the area was established. Settlement Bar quickly formed a loyal following from the surrounding business workers, particularly with after work dinner and drinks.
